Ingredients

For the Pork:

  • 1/2 bottle Skinny Latina Marinade
  • 1 pork tenderloin
  • Salt, for seasoning
  • Pepper, for seasoning
  • 1 cup beef stock
  • Olive oil

For the Aioli:

  • 1 cup mayo
  • 1 clove garlic, chopped
  • 1/2 cup Skinny Latina Marinade
  • Cilantro (optional)

For the Pork Sandwich:

  • 1/2 raw onion, thinly sliced
  • 1 loaf Cuban bread or French bread

For the Cuban Bowl:

  • 2 cups cooked white rice
  • 1 cup cooked black beans
  • Cilantro, to taste
  • Prepared salsa, to taste
  • Shredded cheese (optional)
  • Skinny Latina BBQ Sauce (optional)

For the BBQ Pork Sandwich:

  • Texas toast (2 toast slices per sandwich)
  • Skinny Latina BBQ Sauce
  • Prepared cole slaw
  • French fried onions, to taste

For the Pulled Pork Tacos:

  • Tortillas, soft or hard shell
  • Skinny Latina Hot Sauce
  • Prepared salsa
  • Shredded cheese
  • 1/4 onion, diced
  • Cilantro (optional)

For Crema:

  • Skinny Latina Hot Sauce, to taste
  • 1/2 cup sour cream
  • 1 tbsp water

Instructions

How To:

Drizzle olive oil into the slow cooker.

Add pork to slow cooker and sear both sides.

Pour half a bottle of Skinny Latina Marinade into the slow cooker over the pork tenderloin.

Add 1 cup of beef stock into the slow cooker.

Close lid and pressure cook for 30-35 minutes OR cook on high for 4 hours or low for 8 hours in the slow cooker.

When finished cooking, shred pork.

Remove from pot and place in a separate bowl.

For Garlic Aioli:

In a separate bowl combine 2 parts mayo with 1 part Skinny Latina Marinade.

Add chopped garlic to mixture.

Combine.

If desired, add cilantro to taste.

Pork Sandwich Recipe:

Cut Cuban or French bread and spread garlic aioli on both sides.

Add raw onion.

Add pulled pork.

Cuban Bowl Recipe:

In a separate bowl add cooked white rice and top with black beans.

Place pulled pork on top.

If desired, add cilantro to garlic aioli and mix well.

Add aioli to bowl.

Top with salsa and cheese.

BBQ Pork Recipe:

Using the original shredded pulled pork, add Skinny Latina Guava Fig or Mango Apricot BBQ Sauce to taste.

Use Texas toast or thick slices of toasted bread.

Add shredded BBQ pulled pork.

Add coleslaw.
