Temper your chocolate with the table method.
Clean Your Berries
Wash or wipe strawberries so that they are free from any sand or dirt.
You Have To Dip It
Hold strawberries by the leaves and stem. Dip in chocolate so that 3⁄4 of the strawberry is coated.

Extending the Life of the Strawberries
A candy maker can extend the life of chocolate covered strawberries by coating the entire strawberry. We never dipped berries whole at Peterbrooke because we liked to see the green leaves. But in candy making, recipes and techniques are a matter of preference. Coating the entire berry makes practical sense. To coat the entire berry, simply cut off the stem and green parts and dip the entire strawberry into a bowl of tempered chocolate. Scrape off excess into the bowl. Place on wax or parchment paper to dry.
